What are Microgreens?

Microgreens are the little seedlings of vegetable and herbs, the very first small leaves to open after the seed has sprouted. Chefs cannot herb their enthusiasm and those wanting to improve their health and wellness through nutrition are sneaking microgreens in their smoothies, piling them on sandwiches and mixing them into salads.

Many people think microgreens are sprouts but they are not one and the

same. Sprouts are grown in water and eaten after only a few days.

Microgreens are the tender seedlings of vegetables and herbs and are grown in

soil for between two weeks to two months, depending upon the variety.

Research published in the Journal of Agricultural and Food Chemistry, 2012, shows that when it comes to nutrition microgreens contain between 4 and 40 times more vitamins, minerals, antioxidants and carotenoids than their mature counterparts. 

 

We all know why vitamins are important but not  so much carotenoids.  They have strong cancer-fighting properties and are essential to vision and normal growth and development. WOW!

Lynda and Mark started Naked Carrot in 2006. They sought to create a food growing business that was ethical, producing unusual food which is good for people and good for the environment.

 

As part their ethics they wanted good taste, nutrition, beauty and chemical free …. The only way that would happen was to use the best soil possible. With the help of a soil expert over the first two years, they developed their own special organic soil mix.

It is amazing that doing that one thing right has led to so many unexpected benefits. Chefs can taste the difference as can the judges at the Royal Hobart Fine Food Awards, who chose Naked Carrot from hundreds of entries to win many gold medals and the category for the Best Herbs and Spices in 2017.
